With Thanksgiving just around the corner, and Joe and I doing the 21 Day Fix, I’ve been trying to try healthier alternatives to the traditional staples of a Thanksgiving meal. This one was inspired by multiple variations, that I found on my trusty friend Pinterest. I made it over the weekend and had with a BBQ roast and lemon garlic parmesan asparagus. Let’s just big success, HUGE SUCCESS!! Joey, my 13 year old, came back for 3 more servings, and not just meat, but the mash, and asparagus too.
So here’s the details:
- 1 1/2 Heads of Cauliflower
- 2 Tablespoons Almond Milk
- 1/2 C Grated Parmesan Cheese
- Grated Cheddar Optional
- Salt and Pepper to taste
Break up the cauliflower into pieces. Place in a big pot with water.
Bring water to a boil and boil cauliflower for 8-12min until tender. Drain water reserving 2-3 Tablespoons.
Place cauliflower in blender, add milk, parmesan, and salt and pepper, and blend. Add water if necessary, until desired consistency is met. Voila you are done. For extra cheesy flavor, you can add a blue container of the cheddar cheese to your individual serving, and pop it in the microwave until the cheese melts.
